I was just wondering if there was any kind of egg substitue?.. or what would happen if i made sugar cookies without the egg.

My nephew wants me to make v-day cookies for his friends at preeschool but one child is severley allergic to eggs.. so they are not allowed to bring anything with egg in it..

is there any way of doing this?

There are several substitutes you could use.

There is a product on the market called ener-G egg replacer, you just follow the instructions on the box. You may have to go to a specialty or health food store to get it, but it has absolutely no egg in it, unlike most egg substatutes.

In cakes for egg replacers I use half oil, half applesauce to equal volume. But I'm not sure how it will work in cookies.

Also one tablespoon ground flaxseed plus three tablespoons water equals one egg, but once again, I've never tried it in cookies.
