Usually as the mmf sits, the color intensifies. I'd give it a little bit & see if it darkens. Also, sometimes if I'm using shortening while I handle it (to keep it from sticking to surfaces), it ends up somewhat glossy. Hope that helps!

Do you mean the natural color, that it's not bright white? or you colored it and the colors are dull?

It is more of an off-white color, I find. If you look in my photos, the snowflake wedding cake was done in MMF, it looks kind of cream.

If you do mean the natural color, I just used MMF for the first time and noticed the same thing - that it was kind of an off-white color. Yesterday I found this thread that talked about the brand of marshmallows you use making a difference, but I haven't experimented with it yet.

If I need mmf to be really white I add the wilton white coloring to it, before I add the powdered sugar. Brightens it up quite a bit.

good luck!

from what i've heard, if you use marshmallow fluff instead of marshmallows, then its nice and white instead of off white.
