Can I Freeze A Decorated Cake?

Well...my friend wants me to help her with her cake(kind of like the blind leading the blind
), as I've posted last week, and I can't help her out the day before the party because I'm working, so we decided on a Thursday. (Party Saturday) We have decided on a 16 inch square pan with an Elmo head on top as a second layer.
Question: I recently read that you can bake and frost the cake and freeze the layers seperately, and just thaw the day of the event and assemble.
Is that right? Because friend of mine is hesitant to frost the cakes that early and just leave them sitting out, even though the buttercream frosting doesn't have any parishable ingredients in it. Okay, so, can we freeze them? Will they thaw okay or is it more trouble than it's worth? Just considering this as a backup plan.
Thank you!!!
Angie
You can freeze buttercream decorated cakes, but I recommend that you wrap them in plastic even if it is a light wrap. When it comes to thawing it, leave it wrapped for several hours or your icing will become slimy. Oooh. Not good. Of course if it is only a few days, you can always refrigerate it too without any adverse effects (unless your fridge is smelly). Hope this helps.

Thursday will do just fine as you said your buttercream contains no perishables! If you box it and wrap your box with plastic then nothing will be 'sitting out'! I've done this for lots of customers when I've gone away on the weekend but they insisted on having the cake - even early! Just keep it in a cool, dry, dark(for the colors sake) place, there is no need for freezing!!! I've never had a problem!
I did an anniversary cake last month and it was tiered so I didn't have a box big enough to put it in so I left it sitting on the counter of my kitchen. I made the cake Thursday and we ate it on Saturday and everyone raved about how moist it was. So I think it would be fine left out vs. freezing it.
Of course you can probably find a box to place yours in. ![]()

Have fun with your friend it is not easy for me to teach others to do anything and I tried to teach a friend how to decorate her daughter's b-day cake while also trying to do a batman cake for another friend while she stood and watched...NOT FUN AT ALL!!!! We began at 6pm and they left here at MIDNIGHT!!!! NEVER AGAIN!!!
I don't think you will have to freeze it. I had to make several super bowl cakes for last weekend, So I had to start making them on Thursday night. I sent the first one to work with my husband on Friday morning, told them to keep it refridgerated until sunday afternoon. They raved about the taste & the decorating, so much so, that I received a Wedding cake order from them! You should be fine without freezing! Don't sweat it.
