I can't seem to get the airbubbles out of my icing. I use the half crisco, half butter recipe and I don't think I mix it too long. I thin it with a little water for icing my cake. I just am really having a hard time getting it smooth without little holes in it. I can never attach pictures here so I am putting one in my photos of a cake I iced today. This picture is taken after my best attempt at icing and smoothing with a hot spatula. Any help is appreciated. I am really frustrated.
..pic should be there now!
Anywho...keep in mind that the longer you mix your icing and the higher speed you use..the more air you are incorporating into your icing, which results in more air bubbles.
After you mix your BC, turn the mixer on the lowest speed for a minute or so...that helps to get out some of those air bubbles.
Another way to get rid of those is to wait until after your icing crust over and "buff" the icing with a fondant smoother...it works the same way as the parchment paper method, but I think it does a better job because you can use a good amount of pressure with the fondant smoother.
I don't kow if you already do what I mentioned, but it just a suggestion!
..I've also noticed that if I make my BC and use it right away, it has less air bubbles. If it has been in the fridge for any amount of time, there seem to be a lot of air bubbles....if so, then I use a rubber spatula an make "figure eight" like movements through the BC (repeat many times!) and that also helps to get rid of the air bubbles.
Thanks for the info. I have a kitchenaid mixer and I only take it up to speed two when I am mixing my icing so I don't think I can go any lower and still have it mix in the ingredients. Do you put a paper towel or anything under the fondant smoother or do you put the fondant smoother directly onto the icing? I use a flat tool that looks like something you would use to apply spackel to drywall and I run it under hot water and it still doesn't get out the air bubbles. I will try folding the icing in a figure eight motion as someone suggested.
