This was my first time doing a whimiscal cake and when I got to my destination the top two layers of the bottom tier had slide apart from the bottom layer. I was able to kind of put it back together again, but when it got cut, the dowels were all leaning to the side. It was filled with fresh strawberries. Could that have been the problem? I did put a layer of buttercream first than the strawberries than a strawberry preserves. I do this so the top layer has something to adhere to. The cake was very moist. Should I have had a more firmer cake? I have always make this cake with strawberries and this has never happened before. HELP PLEASE. I have another to do in a few months.
I had a cake with filling also that fell apart. I too put a layer of bc so the filling would not ruin the cake because it would be frozen for a few days. BAD move. I think the filling has nothing to grasp to and the cake just slips and slides all over. My dam broke too when it put the top layer on. Yesterday I torted and 1/2 sheet and did NOT put a layer of bc on. It came out perfect! Good luck with your next one!
was there a jolt during the delivery that made the dowels move? or do you think it was the weight of the upper tiers?
i feel for you, its hard enough just doing the topsy cakes. you are brave for filling the cake. im too afraid and wont do it. only in the bottom tier and i dont shave any off, i just cut from the above layers.
next time will be fine, you can do it!!
I think your jam & fresh strawberries filling was the primary culprit. It surely contributed to the dreaded slide.
Notice that in the tutorial, the cake is torted, but nothing other than buttercream is used for filling. Some people won't even tort these types of cakes. They just stack 2 layers to make 1 tier--even safer.
