Hi All,

Not sure if this is the right place to ask this.

I made red velvet icing (a company's coming recipe) and it says to beat sugar (add agradually which I did) into softened butter until it dissolves. I beat the heck out of it about 25 minutes and it's still gritty. Had to get the hubby to help and still gritty.

There was a milk/flour mixture which I cooked earlier and it was cold in the fridge. I was supposed to add it after the sugar dissolved. Out of desparation we added it and are beating it like crazy with the hand mixer and still gritty.

I hate to throw out everything and start again. Any suggestions?

Also if I were to start again - any ideas where I went wrong? icon_confused.gif

Perphaps it requires a more "heavy duty" mixer? I've beat butter and sugar with my KA and it has dissolved?

Hopefully someone has an answer for you...
