I am going to take a stab at my first chocolate ganache today.
Does anyone recommend a recipe other than the two i found on CC?
and, do I immediatly pour it over the cake of wait? And will it cover on its own or do I have to help it. I want it to be as smooth as possible. Please someone help. I am nervous.
oh yeah...one more thing...can it be used as filling? If not whats the best thing to use?
I let mine sit for about an hour before I poor it on the cake. Just a personal preference. Poor in a circular motion on the top & work your way out to cover the sides & top evenly. It should coat the whole cake. If you let it sit and cool slightly, you can whip it in the mixer to make a thicker "whipped" ganache that can be used for fillings & piping siple designs.
Have fun! Ganache is fun, easy, and most of all yummy!

Briansbaker is right, Dawn's ganache, and instructions are great. This is the only recipe I've used. It whips well also.
