Does anybody know how big of a batch of IMBC can be made in a 5 quart Kitchenaid mixer? I usually make the Mousseline Buttercream from the Cake Bible. If I multiply the recipe by 1.5 it fits fine but Id like to make a bigger batch.

The 1.5 batch uses 1.5 pounds of butter, 1.5 cups sugar, and 8 ounces of egg whites. Before I mix in the butter, the batch is pretty high in the bowl, but by the time the icing is done it only takes up about half of the bowl. Im afraid that if I make a double batch, the egg whites will overflow the bowl before the butter is added.

Thanks for any advice!

I make the 2# butter recipe in my 6 quart bowl and I cannot go higher. The meringue gets out of control and tries to escape.

Thanks. That's what I was afraid of! Maybe I'll try the 2 # recipe in mine.
