I am making SMBC for the first time and it seems like there are a lot of air bubbles in it. I tried running in on lowest speed in the mixer for awhile and it seemed to help a little, but they are still there. Anything I can do to fix it before I ice the cake? Did i do something wrong? Help!

The bubbles come in those last few seconds of whipping. Next time, make yourself stop the mixer, even when you want to give it another few seconds. Its torture, I know, like waiting for a cookie to cool before you eat it!
I can usually lose the bubbles when I bring it back to room temperature after refrigeration. I microwave it for 15 second at a time, breaking it up with a spatula, then whisking as soon as it softens.
Of course, there is nothing like fresh SMBC, so you can cheat it a little.
Take a small amount of it....about a half a cup or so....and almost melt it in the microwave. I know, I know....defeats the purpose of SMBC. Gently fold the melted BC into the rest of the BC. It'll help a little, but it wont fully take them away.
Good Luck!

thanks! I just wasnt sure when it was done exactly! It still looked kind of lumpy, I dont know how to describe, so I kept beating it. When it did finally look smooth it was full of air. I ended up just putting it on because nothing I was doing really seemed to help, but to my surprise I really couldnt see many air bubbles on the cake. Yea! When I did the hot knife around it it looked great! I guess I just need some practice to figure out how much beating is enough!

yeah shirley...where are you? Just kidding! I feel like she has answered so many of my meringue buttercream icing questions, she is probably pretty tired of me. I am one of those people who has to have ALL of the information before trying something new. Hate failure! I think it turned out pretty good though!
