I like to use the bakers chocolate. I have found that the powder cocoa makes it a little more dry. Melt 1 oz choco square per 3 cups of icing and 1 to 2 additional tabelspoons of liquid. Good Luck!

This is the recipe I use and it is wonderful!!!! This makes a chocolate fudge type icing. You can use it for any decorations except roses (it dsnt hold up).

1/2 c. butter
2 tsp vanilla
4 cups powdered sugar (sifted)
1 c. cocoa powder (sifted)
1/2 c. milk.

Beat until smooth. Add more or less milk for the consistency you want.

I use the Wilton class recipe and it was delicious!

1C crisco
4 cups icing sugar
4 - 6 tbsp water (or milk)
3 tbsp cocoa powder

I think I had to add a bit more water, but it was a nice, rich flavor.
