What recipe does everyone use for making cupcakes? Or do you use a cake mix? I have made them with left over batter and they have a more dense consistancy. I have also just used a cake mix by directions and they are really light and fluffy. I am not sure which is the best way to make them....Suggestions???

that would depend on your taste it you like them light or dense either way is right

Thanks Nati....I will have to get out my culinary book to get US equivalants. I will try these. I have your mudcake recipe also and want to try it. I like the cupcakes both ways myself, but wasn't sure if they were really supposed to be more light.

it all depends on what your customer requests. I only offer cupcakes in mudcakes, i make them lighter than the traditional ones, but they are great for freezing and that is why i only offer those ; )
