I think the cake decorating line of work requires as fresh as can be. I store mine for about a week. I try to make only enough to cover the project I'm doing. I know it can be store for longer, but if I were a customer, I certain wouldn't want to eat a 30-day old MMF cake.

Make a new batch. It's simple and easy to make.

I think it is fine. If it was wrapped properly, it is no different than using wilton or any other fondant product that has been stored.
