What Is A Cake Extender?

I keep reading about cake extenders and tried researching it on this site to figure out exactly what the purpose was....I found lots of recipes but nothing that tells me what exactly it does or why one would want to use one! Help?

There are a couple of different reasons to use a cake extender, one is just that to extend the batter...say you are making a 3D bear cake, that takes 6.5 cups of batter and a box mix is 5 cups, instead of having to make another mix for the extra amount of batter, you use the cake extender. I have started using the cake extender for all of my doctored cake mixes because it makes for a lighter, fluffier, moister cake that tastes more like a homemade cake. HTH!

i use a recipe for a durable cake for carving and stacking

its a happy medium between an overly dense scratch cake and a way too airy mix cake.

1 mix
1 c flour
1 c sugar
1 c sour cream
4 eggs
1/2 liquid (water, milk, buttermilk, coffee, fruit puree)
1/3 c oil
1 box pudding mix
1 tsp vanilla (or other flavoring)
1/3 tsp salt

Thanks for asking TrinaH I was wondering the same thing. So you can use any type of box cake mix then add the other ingredients? what flavor pudding do you use

i've used both betty crocker and duncan hines, i prefer betty crocker, the extra pudding in the mix makes for a seriously moist cake even though the extender i use makes for a more dense cake-

i usually add a box of pudding as well...matching the flavor, vanilla cake/vanilla pudding, chocolate cake/ choc pudding, lemon cake, lemon pudding etc.
