There are a couple of different reasons to use a cake extender, one is just that to extend the batter...say you are making a 3D bear cake, that takes 6.5 cups of batter and a box mix is 5 cups, instead of having to make another mix for the extra amount of batter, you use the cake extender. I have started using the cake extender for all of my doctored cake mixes because it makes for a lighter, fluffier, moister cake that tastes more like a homemade cake. HTH!
i use a recipe for a durable cake for carving and stacking
its a happy medium between an overly dense scratch cake and a way too airy mix cake.
1 mix
1 c flour
1 c sugar
1 c sour cream
4 eggs
1/2 liquid (water, milk, buttermilk, coffee, fruit puree)
1/3 c oil
1 box pudding mix
1 tsp vanilla (or other flavoring)
1/3 tsp salt

i've used both betty crocker and duncan hines, i prefer betty crocker, the extra pudding in the mix makes for a seriously moist cake even though the extender i use makes for a more dense cake-
i usually add a box of pudding as well...matching the flavor, vanilla cake/vanilla pudding, chocolate cake/ choc pudding, lemon cake, lemon pudding etc.
