Please Help....need Breakfast Idea/recipe

My brother (who's in grad school about an hour away from me), and a few of his friends stopped by somewhat unexpectedly for the night. I'd like to fix some breakfast for them, but I haven't really had the chance to go to the grocery store.

I definitely want something quick and easy, and I was thinking there might even be a good muffin or not too overly sweet coffee cake recipe in the Cake Mix Doctor that I could use. The problem is, I usually bake from scratch, and I have no idea where my Cake Mix Doctor book is!

Does anyone have a quick and easy breakfast recipe that they'd be willing to share? If it uses a cake mix, great, but it doesn't have to as long as it's quick and easy.

I have a pretty well stocked pantry and fridge, so I have most basic ingredients. I don't have any milk though, or any fruit.

muffin = cupcake in disguise.

mix + extender to make more dense...toss nuts depending upon flavor of mix

and you've got "muffins"

yellow cake + lemon extract (and lemon zest w/ lemon juice for part of water plus poppy seeds....lemon poppy seed muffins

chocolate w/ chocolate chips (YUM!)

Doug, Thanks for the help. Lemon poppy seed muffins don't sound too bad! I don't have any fresh lemons, but I think I have have one of those little plastic squeeze bottles of lemon juice. I bet that would work. What would you add as an extender?

the cake mix extender from here.

it calls for lemon cake mix, but white or yellow would work if toss in lemon extract to get the flavor.

How about monkey bread?? Do you have refrigerated biscuits?? All you do is dip them in melted butter, and roll in sugar and cinnamon. Put them in a bundt pan and bake till they start to brown.

i was gonna suggest monkey bread too. its my staple for overnight guests. i make mine with frozen dinner rolls though...and put nuts. everyone loves em.

my hubby and I love to make breakfast pizza! We usually use a Boboli crust, but some roll-out croissant dough pressed together would be excellent too. We cook up some scrambled eggs (not too done or they will get dried out when you bake it), some chopped up bacon, sausage or even ham lunchmeat in a pinch, and sprinkle cheese over the whole thing. Pop it in the oven til the cheese starts to brown and tah-dah!

how about breakfast burritos. scrammbled eggs,bacon,cheese and onion and roll in soft tortilla. Yummy! I think I am gonna go make one right now. LOL
