Aaaaarrrgh! I Hate Sifting Powdered Sugar!

I have never sifted my powdered sugar (25 years). I don't think it is necessary for buttercream. Buy high quality sugar, don't let it get damp, don't store it for an extremely long time.

Cakery, I heard that the number on the powdered sugar bag refers to the fineness of the grain of the sugar rather than the number of times it has been sifted. That was a discussion in another thread last week. I'd like to see something official on what the number means since there are differing views on CC.

Put it in a blender/cuisinart and blend on high speed. It breaks up the lumps of sugar and does a great sift at the same time. I would then sift it once more with a hand crank sifter to get out any tiny lumps. It works great every time.

Well, judging about the milage this thread has had it is not just me who hates sifting powdered sugar.

icon_lol.gificon_lol.gificon_lol.gif Dolphin, you made me laugh about your food processor story - gotta keep the lid on the thing you know! How do you get a mess from the food processor? I always use the method for flour and find it a lot cleaner than sifting, but it does not work as well for powdered sugar for me, at actually makes it clump in the bottom of the processor, under the blades.

Next time I make American BC I will not sift - I have the bold confidence thanks to you guys!

I have been buying Domino's PS - I really like it, but I still sift it. I guess I can try not sifting it next time and see what happens...

Has anyone tried the PS from Sam's Club? It is a 7 lb bag - I was wondering if you use this, do you sift?

I love Sam's 7lb bag "Dominoes" brand. I've never had any problems with clumping. I never sift.

Up here we only have the choice of C&H or some cheap version. Is there a brand that is better than most, and if so, where can I get it online? I started sifting when I had 2 double batches come out lumpy for 2 separate cakes due the same weekend. Thanks to those who gave me that advice, it saved my bacon.

Is it how cheap or expensive that the powered sugar is or how well it is sifted that makes the difference?

The Sam's club near me did not have a 7 lb Domino's PS - if was some other brand...

I never sift! I just put the sugar in a bowl and stir it with a wire wisk to break up any lumps.....my icing comes out great all the time! icon_biggrin.gif

I have never sifted in the past either to make my buttercream, or anything else with it for that matter! Though I did buy a strainer yesterday to start sifting a little and it is great! I hate the hand cranks too so I tried this and it is great!

This is slightly off topic...I was sifting a cake mix today making a cake when the screen fell out of my sifter!! icon_surprised.gif When DH walked in and saw me trying to push the mix through the screen, he sighed, and said, you know, there ARE people who just pour the mix in the mixer and make the cake.
Maybe I'm an obsessive sifter!!! icon_redface.gif

I don't sift the ps as I stated before, but I do however sift cake mixes. I just started a few weeks ago and I think it does make a difference in the cake. So I don't think your an "obsessive sifter" at all. The chefs on tv and everywhere always tell you to anyway, so it's not like you don't have any reason to sift everything. I'm just kinda lazy and if I can get away without that extra step and mess I willicon_smile.gif

The 7lb bag of sugar at our Sams Club, is the Dominos Brand and its 10x so it says on the back... I dont sift, I use a kitchen aid mixer, and there are NO lumps. At Walmart, I buy the "Dixie Crystals" brand and it's also 10x and No lumps there either. At our Local Dollar General store, they get powdered sugar in "seasonally" and it is soooooo cheap, I have the lady call me and I go buy the case of it. It's just an abstract offbrand, but it is listed as 8x, and Ive never gotten a lump with it either. icon_lol.gif


if I ever do get a lump in it though, Ill let yall know icon_wink.gif
