How Far Ahead?

How far in advance can I cover my cakes in fondant before my event? I'm doing a 3-tier cake for a baby shower on Sun and I'd like to do it either Fri or Sat. so I have time to decorate-the shower's at my house! The carrot layer has cream cheese filling between layers, and the strawberry cake will have a filling that will need refrigeration. Obviously I don't want to leave the cake at room temp. Can I put the finished cake in the garage where it's cold, or will the fondant sweat? I'm just worried I might ruin it!

I've done it even 4 days ahead of time. Just make sure to cover the cake in plastic wrap so it doesn't dry out.
