making a 25 wedding ann. cake in choc. cake any tip for frosting this so no crumbs show (even with crumb coat) and what filling would you suggest? icon_confused.gif

Are you frosting the cake in white icing? I do a thin coat, then refrigerate or freeze the cake. The second coat covers any crumbs that were showing, and the cold icing locks those crumbs in place.
My favorite filling with chocolate cake and white icing is raspberry. Yumm.

I just made chocolate cake with peanut butter filling for my hudbands birthday. They are really yummy.

after you crumbcoat and chill, make sure your second coat is thicker, that way your dark cake shouldnt show through.

i love the combination of chocolate cake and whipped milk chocolate ganache. the raspberry sounds yummy too!

Chco cake with a peanut butter filling (mix PB with buttercream) is so good, it tastes like a PB and Fluff sanwhich!

Cookies and Cream filling is good if you're a chocoholic like my husband, but I like the idea of the Raspberry...

What would be better- a raspberry mousse or straight raspberry filling?

Chocolate/raspberry is YUMM!!! When I frost chocolate cakes I do a crumb coat first,refrigerate,then I use a big plastic decorating bag to pipe the icing depending on the cake shape,then smooth.I get a thicker second coat and the bag spread the icing more evenly. icon_smile.gif

Chocolate cake with the Raspberry Mousse Filling recipe from this site is awesome! I do not even like chocolate cake but this I ate and loved it!
