Will Cupcakes Last 2 Days?

Hi all,

If I make a cake and cupcakes with bc icing will they still be good/fresh tasting in 2 days?
Can I put them in the fridge after being decorated? or before?

They will definately still taste good. Just make sure you store them in an airtight container!

I think everything lasts longer in the fridge- no problem to put them in already decorated unless maybe you have fondant or gumpaste accents.

I try to avoid the fridge at all costs unless its a cream cheese icing or something that has to be refrigerated. Refrigeration tends to dry cakes out. What I typically do is box my cakes/cupcakes as though they are ready for delivery. Then I wrap the box in cling wrap. Next I slide the box inside a clean garbage bag, press all the air out of the bag, and tie off the end of the bag. Lastly I find a place in my house that is on the "cool" side of room temp, or slightly cooler. For me its generally my garage. I leave it there overnight or up to 2 days. Then unwrap and deliver. They are fresh, moist, and delicious.

I agree! I only refrigerate if it has a perishable filling. I have a separate fridge in my garage that I will set at a "cool" temp for regular cakes and I just adjust the temp if i have a perishable product.
