Does anyone have a good recipe for caramel (flavored) buttercream?

You can take your current buttercream recipe and put in either homemade soft caramel (the condensed milk caramel works well) or caramel topping from the grocery store. While you're whipping your buttercream slowly start adding a stream of the caramel. Add in as much or as little as you want to get the flavor you need. Don't forget though, if you're using a crusting buttercream, the more caramel you add, the less it will crust.

You could also add a caramel flavor to your regular BC-- Like a Lorann caramel flavored oil... or add caramel coffee creamer.

Mendhigurl - thanks so much - that sounds great. May i ask though, i make the BC as usual and add the caramel topping? that is, i do not omit like the vanilla extract that orginarily goes into making the BC?

What I did was simply combine both icings. One time I did my regular buttercream icing and then added a simple caramel sauce (that was done over the stove-brown sugar, butter, milk) and the next time was even simpler. My buttercream and found caramel icing (duncan hines) and mixed the two together. BOTH TIMES WERE DELICIOUS!!

Howie - i never thought of adding the DH caramel icing to my BC. Did you add the entire container to your BC or just 1/2?

sorry so late in response--i added about half. I didnt want it to be completely caramel. I wanted it to still have the taste of BC

what about this one.. it's wiltons recipe. im not sure if it's any good but it sounds good lol.


Caramel Buttercream Icing

Ingredients
1/3 cup solid vegetable shortening
1/3 cup butter
2/3 cup caramel ice cream topping
2 tablespoons milk
1 teaspoon Pure Vanilla Extract
4 cups sifted confectioners' sugar (approx. 1 lb.)

Yield: 3 cups icing.

Directions
Cream shortening and butter with electric mixer.
Add ice cream topping, milk and vanilla.
Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often.
When all sugar has been mixed in, icing will appear dry.
Add milk and beat at medium speed until light and fluffy.
Keep icing covered with a damp cloth until ready to use. For best results, keep icing bowl in refrigerator when not in use. Refrigerated in an airtight container, this icing can be stored 2 weeks. Re-whip before using

This sounds delicious. I usually buy the wilton already made stuff in the jar, would I still be able to add the carmel topping to it?

you probably could, but to be honest, i have no idea. i have very little experience in making my own buttercreams.

you must be battling insomnia or have not corrected your clock. You posted at 3:30 AM?
You have plenty of time to make your own buttercream now. Try it you will like it. Keep leftovers in the fridge and rewhip it when you need it. Great stuff.

I have tried both of them, for some reason my homemade buttercream tastes to much like crisco, but when the instructor made hers it was different, maybe because she used the almond flavoring. My husband really likes the sweet sweet stuff. Any suggestions? icon_rolleyes.gif

lol chiara, i think i do have insomnia! my friends usually call me a vampire cause i stay away during the night and sleep during the day lol. my normal bedtime lately has been 6am. do you think i should go see a doctor? lol oh and i have tried my own buttercream..once. it was good but my only problem was that i didn't really like the texture of mine since i felt every granula of sugar. i'll tried a finer grain next time.

I would give it another shot since powdered sugar should not be granular tasting. Did you get it at No Frills or Loblaws? I would either switch brands or stores to see if your supplies might be a tad bit old.

no, it wasn't powdered sugar that i was using. the recipe i used called for regular sugar..which was obviously the problem but i am gonna try again tmr! with a different recipe of course. oh and could buttercream be frozen?
