How To Get Cookies To Be Chewy?

ive tried loads of recipes for chewy oatmeal cookies and even chocolate chip cookies. But they never seem to get chewy. its always soft but never chewy. anyone with any tips?thnx in advance.

Either all the cookie recipes are wrong or there's operator error.

Try baking for less time, and check your oven temperature.

Arwa, more brown sugar and less white normally yields a chewier cookie. Alton Brown on the Food Network did an episode on chocolate chip cookies and I think made 5 different cookies, all with different textures. That being said, pm me if you'd like a great recipe.

Use bread flour:

The high gluten content will make the cookies chewier. If you're using cake or pastry flour, they'll end up softer. Also mixing them for longer will help with chewiness (but only if you have wheat-based flour in the recipe).

1. Use melted butter
2. Make your cookies larger...I like the 1/4 c cookie scoop.
3. Take your cookies out a minute or two early when they are just the slightest undercooked.

Melted butter makes for a flatter, crisper cookie. using Brown sugar instead of white makes for a chewier cookie.

I increase the brown sugar ratio to the white sugar (packed)
and decrease the oil or butter by 2 tablespoons.
