HI,
DO any of you that have shops do sugar free items? The grocery store I work at gets request almost daily for sugar free decorated BD cakes. If so, what do you use, how do you give them the nutritional info.?

Are there any legal situations for doing this type of thing?

I'm debating about doing them when I get my place open.

I can't imagine why there would be any more legal issues with baking sugar free than not. Somewhere I saw some icing recipes but I can't recall where. Though I should be eating sugar free because of my weight, I don't. It is so expensive using Splenda. I just do without. icon_cry.gif

When in doubt, contact your local health department. They should have some help for you.

Do you use whipped cream icings instead of buttercream on those cakes?

I'm looking for an eggless cake recipe for a friend. ~sigh~
