Cake Ball Question

Hey Everyone:

I agreed to make 100 cake balls for the wedding of a co-worker's daughter in early April. I'm going to try to get them made and in the freezer this week as I have several other cakes to do in March. I guess I need to get better at saying no.....none of these projects are "want to do" they are all "feel like I have to do" icon_cry.gif Ok, enough pouting.....

My question is do any of you have any assembly line sort of tips for making this many cake balls? I have all my cake scraps already out of the freezer and have baked two 13X9 cakes. If that's not enough to make 100, I'll just have to bake another cake. I'm using southern butter pecan coffee creamer to bind them and have my cookie scoop ready. Any ideas for streamlining or just make one batch at a time?

I know I need to wait to dip them in chocolate.....I'm guessing I'll need about 5 bags of melts to cover them all. Any ideas on how many cake balls can be covered with one bag of melts?

I use the cookie scoop to make sure all of the cake balls are the same size. I dip in chocolate and usually use around a 12 oz. bag for about 3 dozen or more. Hopefully someone who uses melts will reply.

I make a batch up one day and then another the next.

I have a little assembly line going when I do them to make it easier too. I can usually get about 3 1/2 doz. out of a 9x13. So two 9x13 cakes should be enough depending on the size you are making them.
