I made a replica of a Gibson Les Paul for my husband last year.
I couldn't find any patterns, or tins that looked real enough to me, so I found a picture on the web, and enlarged it with a photocopier until it was the size I wanted and used that as a template to cut the cake with.
The only real issue I had was the neck.
If you make it out of cake you can't shape it like a real guitar, for support it needs to touch the cakes board. However, I have seen someone make one where the icing they used to cover the board, white I think, was continued up the cake to sort of disguise the extra neck width, does that make sense? It was an optical illusion, but it was very effective.
Also, I've seen the neck done with carved styrofoam, covered in icing and supported at the end with a clear cake pillar, which also looked good. I guess you could make this with cake, if you were clever enough to make your own base board for the neck, instead of useing styrofoam.
