Vegan Buttercream Frosting: Substitute For Meringue Powder?
Decorating By VeganFencer Updated 9 Mar 2007 , 11:37pm by VeganFencer
Hi, everyone!
I'm currently starting to take the leap into cake decorating for "real." I'm taking a Wilton class that requires meringue powder in the buttercream frosting recipe. But, I'm a vegan and don't want to use animal products. My instructor said I can probably make it sans powder, but am curious if anyone knows of a substitute?
Thanks!
hey!! nice to meet someone else on here who's vegan! i've taken the wilton class 1 and continued learning more advanced techniques on my own and through this site. i've never used meringue powder and it works perfectly! don't worry. i personally think the whole meringue powder in the buttercream is a scam anyway. no real buttercream recipes ever call for it. just leave it out!
The only time I worry about meringue powder (which I really don't) is when it is very hot and humid. The buttercream will crust just fine without it. It's supposed to be a stabilizer I think, but I really haven't noticed a difference, but even in summer, I'm doing cakes in air conditioned comfort. HTH
the BC will definately crust without it.. its the ration of fat (crisco/butter) to sugar that causes the crusting. I learned that on CC
Awesome. Thank you for the tips. Glad to meet another vegan, too! ![]()
