The girl I am doing a cake for really likes what I have but just doesn't like how sweet the Buttercream is. I told her I could make it less sweet but after trying some batches nothing is working!! icon_cry.gif Any ideas of what I can do? The recipe I am using is just the standard buttercream with 1 pound Powered Sugar, 8 tablespoons of butter, 2-5 Tablespoons milk, and 2 teaspoons vanilla (I'm kinda guessing here, I don't have the recipe in front of me). TIA!!!

Italian or Swiss meringue buttercream Lisa. It is less sweet, light and fluffy and smooths beautifully.

Have you tried IMBC (Italian Meringue Buttercream)? I made it recently for the first time, it is very good and much less sweet than regular buttercream (see Shirley's recipe in the recipe section here). The only thing with IMBC (and SMBC) is it doesn't crust, so you can't used the viva method to smooth it, but Shirley recommends the hot spatula method to smooth it instead.

If you need a less-sweet buttercream that crusts, try substituting 1/3 to 1/4 cup flour for an equal amount of powder sugar, and add a 1/2 teaspoon of salt. This helps cut the sweetness somewhat.

I agree with the other... go with IMBC or SMBC. But if she really likes the texture of the one that you made earlier, probably you can try to use salted butter to reduce the sweetness.
