Does anyone have an easy and tasty strawberry cream cheese filling recipe?

*** Sorry this is appearing and disappearing: The sight burped when I posted it the first time and it ended up posting twice. I thought I was just deleting one, but both deleted instead. icon_surprised.gif

I just made this type of filling the other day. The cake was for a diabetic relative. I used low-fat philly cream cheese, all-fruit spread with no added sugar and a little over 1/2 tub of lite cool whip and mixed together. The cream cheese must be softened first for it to whip properly. This filling was wonderful and guilt-free as far as cake goes.

I'm guessing you could turn the above into a more stable filling by using heavy cream instead of cool whip and add pwd sugar to thicken. A lot of people on the board use pudding as filling. How about a vanilla pudding mixed with strawberry cream cheese?
