I have the Wilton plastic cutting wheel...and I use it because I can't use a knife on my Roul-Pat but sometimes when doing ribbons its easier to cut it with a wheel.

Where can I find a good quality wheel that cuts clean, rather than slightly jagged, edges? Also that's safe on a Roul-Pat?

Hi there, I use a pizza cutter, with a sharp edge, i think i got it at target and it works wonderfully and i always use it on my silpat and never damaged it. I have also seen one on crate and barrel that looks real nice http://www.crateandbarrel.com/family.aspx?c=746&f=11865&q=pizza&fromLocation=Search&DIMID=400001&SearchPage=1.

HTH,

Jenn

Hmm ok...I have a pizza cutter... but I like the way the Wilton one is small and can go around curves, etc....I guess that is more of what I am looking for, if there IS such a thing....?

Look for a pastery cutter, they are smaller, i have one that has two wheels, one is straight and one is wavey.

BTW: pizza cutters come in different sizes, just keep an eye open until you find one that you like.

Oh cool, thanks! I'll have to remember that next time I go down there... I wonder if Oasis supply can order it? Hmmm.

First thing I would do would be to buy a good quality, large size cel board, preferably one with a smooth side that reverses to a ridged side. Roll your gumpaste or fondant on that and do your cutting there. Don't cut on you Silpat or Roulpat at all. They are wonderful for rolling but I wouldn't want to mar them by cutting on them. Here is a nice one from Nic Lodge, on the same page are the foam cel mats for thinning and ruffling, and the metal ball tools are on the next page.
