I have DS's cake all sketched out, but I borrowed an idea from a post on a different website to make the buildings by baking cake in a bread loaf pan. The other web site gives you no way to contact anybody!! Has anyone ever done this? Does one box cake mix make one or two loaf pan cakes? What temp. and how long? THANKS!

What size are your pans? I"m assuming you aren't using little pans.
I'd fill them about 2/3s of the way, maybe a little more and put a cookie sheet under to catch drips if I wanted to be sure they filled the whole pan.

As for baking I'd bake at 325 and start checking after about 30 minutes but it could take up to 45-60 minutes depending on the pan size.

What PP said sounds about right. I have never made regular cake in my loaf pans but I have made plenty of banana loaf, lemon loaf, etc... and I fill them about 2/3 full and it takes 45 min or so.

Definitely don't fill more than 2/3 full ... I made a cake in a loaf pan last week and it almost overflowed horribly. It also seemed to take forever for the middle of the cake to cook even though I used an upside down flower nail to help distribute heat through the middle. The edges seemed pretty dry, so if you have those pan wrap things you may want to use those.

I don't know what any of that stuff you mention is, sorry. I am but NO MEANS a professional. I just like to make nice cakes for my boys' birthdays. Do you remember what temp you tried cooking it at? Maybe I'll test run in a cooler oven. Thanks!!

Sorry for the delay and I have only made a handful of cakes myself, so definitely not a pro.

I think I started at 325, so not sure if you want to try 315 or so?

The flower nail is a metal "nail" (used to make flowers on) ... adding that helps to distribute heat through the center of the cake.

The wraps are called "Bake Even Strips." You should be able to do a search on the boards to learn more about them. I haven't made that investment yet.

thanks so much for the reply, i will have to try that nail trick, do i just plop it in the middle of the batter once its in the baking pan?

grease nail (just like pan)

put in pan first

then pour in batter.
