Need Tried And True Recipe For Eggless, Milkless
Baking By Kitagrl Updated 25 Jan 2006 , 9:00pm by Alien_Sunset
I know there's a zillion threads like this but if someone could post a tried and true, delicious, fairly stable cake recipe with absolutely no egg or milk products for a highly allergic little boy, that would be great. I am kinda scared to do it because I don't want to be blamed for anything but I guess its safe as long as I'm careful. The cake has to be 11x15 so the recipe will hopefully not be too crumbly.
Also I need a good icing recipe as I dislike the all Crisco buttercream but I can't use real butter. I have to pipe designs on the cake so it should be not too wimpy.
Thanks!
I noticed that Target carries a brand of cake mixes that are nut, egg, and dairy free. I think the name was called Cherry Kitchen or something like that. It was like $5.99 a box at my local Target. They had frostings too!
Have you checked any of the recipes on this site for "eggless, dairy-free or milk free" recipes? There is the one I posted that is really good. (got it from my mom) It's the "wacky cocoa cake" recipe. Makes a deliciously dense very dark chocolate cake with no eggs or milk in it at all. And yes it is tried and true fer sure. It's my mom's fav cake and she can tell you the recipe right off the top of her head.
You can try sites like Vegan Chef & PETA for recipes. It always amazed me that PETA lists Duncan Hines as a vegan product because the mix has no dairy or poultry in it, but there is only one recipe on the box & that uses eggs! go figure lol

This is my favorite cake recipe. it's completely vegan, super moist, and DELISH!
For a 9x13 cake:
2 1/4 c flour
5 tbsp cocoa powder
1 1/2 c sugar
3/4 tsp salt
1 1/2 tsp baking soda
3 tbsp applesauce
3 tbsp oil
1 1/2 tbsp vinegar
2 tsp vanilla
1 1/2 c cold water
mix the dry ingredients
mix the wet ingredients
mix the two together thoroughly, but do not over mix.
Bake immediately at 350 for about 30 minutes.
Also, for vegan frostings you can try vegan whipped cream:
1/4 c soy milk
3 tbsp sugar
1/2 tsp vanilla
1 tsp cornstartch
1/2 c oil
in blender mix everything but oil. Slowly drizzle in oil until smooth and creamy, chill one hour before using.
Or for a vegan buttercream use margarine (check the label to be sure it's vegan first) instead of butter. You may need to add a little extra sugar and less water to make up for the water content of the margarine.
