Egg Yolks .... How Long?

I am going to make a white cake tonight and it calls for 8 egg whites I know there is a recipe for 8 egg yolks. Is it safe to save the yolks until tomorrow?

Absolutely. If for whatever reason you wind up not making an 8 yolk recipe tomorrow, you can freeze them. Mix in 1 tsp sugar per yolk and freeze. Thaw overnight in the refrigerator and subtract the 1 tsp of sugar per yolk from the total sugar in your recipe. One of the handiest things I learned in school!

Yes, they will be fine for a day or two in the fridge.
