Hi,

I have tried twice to get my ganache smooth on the sides of my cake. I always get a ring around the middle where I have put whipped ganache in the middle of the layers. Would it come out smoother if I covered the cake in buttercream first? I know I have read that on here before, but does it make a noticeable difference? Any ganache experts opinions would be appreciated.

Cover it all in buttercream first to smooth before pouring the ganache. Be careful the ganache is not hot or it will melt the buttercream and slide down.

Like Mary-ann said, you need to let the ganache cool before pouring! It should cool to about the consistencey of corn syrup.
