(i sometimes mix on box DH french vanilla w/ 1 box DH Butter recipe chocolate (and use butter to replace oil called for w/ FV and milk for all water) to make a "milk" chocolate cake.

I am with you red velvet cake lacks flavor. A good chocolate cake would be much better.
My favorite "carving recipe" is one box of yellow Duncan hines to one box of Betty Crocker pound cake mix. Then add some pure vanilla and it turns out a nice sturdy and very moist yummy cake! I use that almost every time I do 3D stuff.
Otherwise what I use that is as good is I use either yellow Duncan Hines or chocolate DH and then use the side of the box where you add an extra egg and a box of pudding in it. It makes a nice moist cake as well, very yummy, and I dump vanilla in that too.
You could use the yellow and then swirl in some chocolate...don't buy the premade marble cake though, I tried it and its not very good.
