Strawberry & Banana Filling

Does anyone have a recipe for a strawberry & banana cake filling? I had this at a friend's birthday a long time ago and loved it. (Her husband had bought it from an italian restaurant/bakery.) I thought about trying whipping cream with a little sugar and vanilla whipped in and then fold in sliced strawberries & bananas.

Any recommendations?

Just a thought, but if you just fold the bananas in it, they are probably going to turn brown and not look too appetizing. Not sure, though, I've never tried it.

Perhaps you could use a banana pudding for flavoring with the strawberries....then you wouldn't have to worry about brown bananas!

llj68 - I had thought of the brown bananas too. That's why I was hoping someone had a recipe they could share. The cake I had, had fresh bananas and I don't remember any discoloring. Best I can remember, the filling was like a whipped cream. I'm hoping someone has a recipe like this to share.

ape - I love banana flavored pudding, I'll have to try that.

The only other thing I can think of is maybe they put a bit of lemon juice on the bananas before folding them in? Or the cake was made just before service.

You could be right, although I've only heard of lemon juice for apples. Maybe it was made that soon before. It was a no frills cake. Just smoothed icing with a simple border. I just really liked the filling.

Hey there,
The cure for brown bananas is to toss them in lemon juice right after they've been sliced. You'll obviously have to balance it with some extra sugar. Personally I think you should go with the pudding and put a little gelatin in it to thicken it up. Then layer the red filling on top of the yellow if they set right it'll look really cool when you slice into it.
