High Altitude (Colorado), Nfsc, And Ri

I'm heading to Denver in July for my sister's wedding. There, I will be baking 75 wedding cake cookies for her favors. Sometime in the next few months she plans to make a batch of NFSC to test how well they do in her neck of the woods. I'm more worried about the RI drying. I won't have time to play around with it that much. Does it seem to take longer to try in higher altitudes? I'm not sure what exactly high altitudes mess with (besides me!), but knew it affected cooking to some degree.

I just moved from Salt Lake city to N. KY and I did not have any problems with either cookies or RI. Now I did not use the recipe posted here so I am not sure about that.
Now having said that we did not have any humidity at all. Just have her made a batch and see how long it takes to cure. I tended to leave it out for 24 hrs and it would be nice and hard by then.
The one thing I did know is that I could not make a loaf of bread to save my life! (nor could my bread machine). So 7.5 yrs out there and I have not attempted bread since.
she has plenty of time to make a batch of each. You can also make all these ingredients and fly them out with you or drive them out with you no problem. I did that just this past Sept.

I don't know if I can convince her to make a match of RI and play with it. She is a music teacher, not a baker. LOL!
We are driving out a week before the wedding. I don't think week old cookies in a hot car are a good idea. LOL! There won't be any extra room either. Mom is already huffing about me taking the stuff I need to decorate. It's just a small box mom! It's not like I'm baking the wedding cake! There are 4 adults and a 9-year-old and all their stuff. LOL! It's going to be a long few days!

Altitude won't affect RI- the main thing that will matter is our humidity (or lack there of) If anything, it will dry quicker here then it does in your climate.
I'm not familiar with your cookie recipe, but the SC receipe I use is also used by other decorators all over the US. I don't have to make any changes to it for altitude.
I use NFSC recipe.
Thanks! I'm so worried about having to make 75 cookies a few days before the wedding that I'm trying to work out any possible kinks now. LOL! Like that is possible. We (family) are all staying at her house before the wedding, so I will have lots of help if anything goes wrong.

Anyway, it went pretty quickly once I got going. the things that helped me out the most were a silicone mat to roll the dough on and two 1/4" dowels along either side so the dough was always the same exact thickness- that helped so much. Then three silpats on three pans, they were each staggered enough that when I pulled one out of the oven, popped the next in, loaded the third pan. I swear the silicone mats are SOOO worth every penny- no greasing the pan, no sticking, heaven!

If you are only baking cookies it´ll be fine with the altitude. I live in Quito, Ecuador (9252 Feet) and I have no problems with RI or cookies. You might have to make some adjustments if you are baking a cake though. If you need any cake recipes I´ll be happy to help you.
Holy cow, 445 cookies!! And I thought 75 was a lot! LOL!! ORganization is definitely the key!
It really won't be a problem with the RI.
The other option you have is ship your stuff that you need ahead. That way it will be there when you want it and it won't take up any room in the car.
You won't have a problem with the cookies. You might have more issues with being overcrowded in one house.

I thought of that too when my sister said we could all stay with her. It's just the two of them and I believe there are 3 or 4 bedrooms and a loft room. I think we'll be okay. This is a very casual affair, in a little mountain town of Colorado, so no wedding day craziness like there was for my traditional church wedding. LOL! I still can't wait. It's still a wedding and it will be fun no matter what.
