cupcake cake are becoming popular over here how do you ice the top ,every pic ive seen the top is perfectly smooth
do you flatten the cupcakes before they cool or are they covered in butter cream then fondant

To get the tops flat I put a cookie sheet on top of my cupcakes as soon as they come out of the oven then after they cool put them very close together and ice the top like a cake. Hope this helps.

Hi! Yes you flatten the cupcakes as soon as they come out of the oven. I place a piece of parchment paper across them and then put a heavy wooden cutting board on top. I usually leave it on top for about 5 minutes. Once I place them on the board, I use the icer tip to apply my buttercream and smooth with a spatula. Hope this helps! thumbs_up.gif

Not me, (I don't flatten first) I put all my cc's together, put gobs of BC on top and ice them like a sheet cake using an offset spatula and then taking the excess icing off with a scraper and get a nice smooth surface to decorate.
