Hi! Yes you flatten the cupcakes as soon as they come out of the oven. I place a piece of parchment paper across them and then put a heavy wooden cutting board on top. I usually leave it on top for about 5 minutes. Once I place them on the board, I use the icer tip to apply my buttercream and smooth with a spatula. Hope this helps! ![]()
Not me, (I don't flatten first) I put all my cc's together, put gobs of BC on top and ice them like a sheet cake using an offset spatula and then taking the excess icing off with a scraper and get a nice smooth surface to decorate.
