Icing - How Long Is It Good? Need Answer Asap ;-)

Hello Everyone -

Does anyone know how long icing is good for? I made my daughters birthday cake 10 days ago and I have icing left over from that. I have the icing stored in a plastic bag ... already in the decorater bags with tips still in them ... just as I left it after decorating my daughters cake.

Now, I am getting ready to decorate my SIL's birthday cake and I was wondering if I should throw out the left over icing and start new ... or if I can still use the icing I have?

I only use the following in my decoraters icing:
- Water
- Vanilla
- 10X Sugar
- Shortening
- Meringue Powder (sometimes)

I dare say, indefinate, since there's nothing in it to go bad. (i.e.- dairy products.)

I had some for over a year, and though I didn't use it for a customer, unly when I was making something just for me, it was fine. Might sound gross, but it's perfectly alright.

I'm not sure if I remember this correctly, but my Wilton instructor said if you use water instead of milk and all shortening it can last up to ten days. Can't remember if she said it needed to be in the fridge or at room temperature. Usually when I leave icing in bags, after a week they are starting to seperate. I've also seen after a week at room temperature little spots that look like spots of the color but at the same time look like mold spots...that one is hard to describe. Smell it and check the consistency for sure.

According to Wilton the Class Buttercream (icing made with crisco and water) is good for several weeks on the counter. You can also keep it several months in the fridge or you can freeze it as well. Sometimes you will need to beat it a little before use.

Before I use any icing that I have had any lenght of time I will smell it and taste it. I've had some icing in the fridge for a few months that was perfectly fine to use.
