Help With 2 9" Cakes (Using Boxed Cake)

Hi--I am new to all of this and I have a question concerning boxed cake mixes. I want to make a 2 layer (2 - 9" cakes)---I am using Wilton cake pans which call for 2 3/4 cake mix each. How much does one boxed cake mix yield in batter? What is a cake extender for and do you recommend for this circumstance? What do you recommend?

I usually use the wilton 8" pans and one cake mix makes 2 pans or you can use 9" pans but they are a bit thinner.. I do not use extender the 8" is nice and high just do not use a Plisbury mix or your cake will not be as high as BC or DH

You can use 1 box mix for 9" but they will be thin. I have done it many times though. Depends on how thick you want them. If you want it thicker us the extender recipe on this site. Sometimes I think using the extender makes them too thick! Personal prefrence I guess.

I use 1 cake mix plus a small pudding pack,an extra egg and 1/2 C oil instead of the 1/3 they usually say on the box. The cake comes out much better tasting and moister with these additions and adds a little extra batter. I make 2 nine inch pans with this and they come out to be good size layers.

If you're not going to torte the layers, you're probably better off not having them quite as thick. Personally, I'd use 2 mixes because I like a nice tall cake and I do torte my layers. If there's any leftover batter you could always make a smaller cake or cupcakes and freeze them.

How much batter you will get from a cake mix depends on the brand and the flavor. They can make anywhere from 4 to 6 cups. I have found that most DH mixes do make 5 cups or over, with their Golden Butter Recipe making a full 6 cups.

What I usually do is do one box in each 9 inch pan and then use one as my bottom and one as my top... this way I don't have to make sure to get them back on the right way... but if you wanted, they each would be thick enough to split once and fill so you have 4 layers. I too like my cakes tall... just looks nicer! Plus it's more cake!!! icon_lol.gif

I'm a Pillsbury girl and my cakes come out a pretty good height. I also add the box of pudding mix like Euphoriabakery and I usually get about 4.5 sometimes 5 cups of batter per box. According to the Wilton chart you need about 5.5 cups of batter for each pan.
