I dont know about fondant...I dont know if that would work. Maybe candy clay though? Dont know. I think people do ice cheesecakes in buttercream though.
I covered a cheesecake in cream cheese icing and than in chocolate plastique which is very much like fondant.

did you stack any of the cakes. I was wondering about a making a 10-8-6 wedding cake and making each layer 2 three inch layers. If I place a plastic plate and dowels in between each one of the layers do you think it will stay or do you think the dowels would move to much in the cheesecake.
