Buttercream Roses

I'm having a hard time making buttercream roses. Its very humid here just now and they keep melting before I can get a few petals done...they literally fall off the stick icon_sad.gif
is there any way that I can do them in the hot weather without this
happening?

Add powdered sugar, and use two bags. Chill one bag while using the other, and it will stay cold enough to work better. Roses require a STIFF icing.

Are you using an all shortening buttercream recipe? This helps the buttercream not melt so much. Recipes with real butter melt too quickly for me to use here.

Something I just thought of too....there was a girl in my one cake class that had really really hot hands. She would start using the icing bag and the icing would start melting.

The teacher recommended either chilling the bag or sometimes dipping her hands her cold water.

Could it be that your icing is not stiff enough? You could try freezing the cone after you pipe it/before you pipe the petals........

Just a thought!

It gets really hot and humid in this part of the world also. I usually do my work in the early morning or late at night when it is coolest (no central air) I keep a bowl of ice next to me to keep my icing bag and to rub on my hands as they are always warm! I put finished roses over bowl of ice (on foam holder) Using 2 bags is a good idea, duh never thought of that!! thanks

its the humidity thats the problem...and I don't have any air con icon_cry.gif
I'll use these ideas to see what works for me
