Filling For A Jamaican Rum Cake

I plan to make this for my father and was wondering what would be a good filling? I thought of coconut or pineapple for a tropical twist but am scared that might be overwhelming to the rum flavored cake.

are you planning to frost & decorate it? maybe you could flavor your icing with rum flavor and use that as a filling

by the way, I'd love to have your recipe for the jamaican rum cake...I have lots of jamaican rum at home icon_smile.gif...and Australian and Indian and any other kind of rum you can think of! icon_redface.gificon_biggrin.gif

For cake:
1 box yellow cake mix
1 box vanilla pudding mix
4 eggs
3/4 cup dark rum
1/4 cup water
1/2 cup vegetable oil

For Glaze:
1 stick butter
1 cup sugar
1/2 cup dark rum


Mix all ingredients for cake in a bowl with electric mixer until just blended (for about 2 minutes).
Pour into prepared pans and bake at 325 degrees until toothpick inserted in the middle comes out clean.

While the cake is baking, cook the glaze by dissolving sugar in butter in the saucepan. After the sugar has dissolved completely, add the rum.

When the cake is done, prick it with a toothpick and pour glaze on top of the warm cake. Wait until the cake is cool to take it out of the pan. Tastes best the next day.

If you feel this recipe calls for too much rum, reduce the quantity of the rum to what you are comforatble with and substitute with water.

I want to try filling and frosting this cake instead of the sugar glaze i coat it with..
