Defrosting Cake Question?????

Hi!!!

I have almost finished baking all the layers for the large wedding cake. I have been preparing the layers with Squirrelycakes apricot glaze. I have also filled the layers with plain buttercream frosting.

Can the cakes be thawed in the refrigerator??? Has anyone done this before??? I would like to start decorating some of the cakes on Thursday and was thinking about taking them out of the freezer Wed. night. If I put the cakes in the refrigerator Wed. night...will it thaw overnight??? Or do I need to leave it at room temp.???

I usually always thaw my cakes at room temp. with the wrapping still on. However...I was wondering if it would work in the refrigerator. Any advice would be great!!!!! icon_smile.gif

Where did you find pure apricot jam for Squirrellycakes' glaze? I have been to 3 different grocery stores & all I can find is "no sugar" (all fruit juice) & jellies.

I think I may be using an older recipe. I buy apricot preserves from Walmart. I actually have not looked for the pure kind yet. I like the results from this recipe and have a few bottles of preserves that I wanted to go ahead and use.

Have you ever tried defrosting a cake in the refrigerator???? icon_smile.gif
