Hello again, I was wondering, when using chocolate decorations, how do you guys keep the chocolate from melting? Is there a certian type of chocolate that holds up better than others? I want to try a beach type of cake with chocolate sea shells but, I am worried it will all melt, lol...help!!!

You mean once they're on the cake, right?
Candy melts down't melt once they've been placed on the cake. I just made names out of white candy melts and stuck them into a cake, no problems with melting.

Yeah, after they are on the cake...I havent tried this yet but, I want to and thought I had better find out the best way to approach it. Ok, good, so no problems with melting...do you use a certian type of chocolate?

i would use candymelts (wilton or some other brand) they seem to hold up the best without melting.

I use candy melts A LOT without incident. HOWEVER, candy melts like BC will melt in the presence of HEAT (like summer heat and humidity). Inside, there should be no problem at all though.

I like candy melts a lot more than other chocolate because they are already "tempered" and come out so nice and shiny! Are you going to luster dust your sea shells? That makes them SOOOO pretty!

yep, just 'candy melts' from Michaels or wherever...they were just on sale for 1.75 a bag at Michaels. I'll be posting some pics later of the cake I am delivering in a few minutes...I used white candy melts to spell out some names and the number 25 for an anniversary cake. But one thing ya gotta watch is once that stuff starts hardening, it hardens fast! I was waiting for it to be stiff enought to pipe and then it was too late! I had to nuke it again! Regular chocolate isn't like that...at least not to me.

Bethola I looove luster dust or anything that shimmers!! I will be sure to post some pics after I make this cake!! Thanks for the tips!

Wedoger I will definitely keep that in mind, Chocolate does harden fast and I am a slow worker with new stuff, im sure I will have to remelt a lot, lol. Cant wait to see your cake, Im sure it is very pretty!

Here is the cake...the names and numbers are white candy melts painted with nu silver luster dust...I piped stems on the bottoms so they could be stuck into the cake.

very nice. excellent job. and good idea about the 'stems'. i'm a big advocate in sticking things in so they don't tip over!

Geez, those candy melts last forever!!! (almost)
I am making some more stuff now for cakes that are due this month...later in the month...if you make them now I am sure they will be fine!

Yeah I know! Its so much fun doing/learning all this stuff!
I am doing a 'barnyard' cake for next weekend and I am gonna make my first attemp at some candy mold farm animals. Monday I have cake class and tuesday I start fondant/gumpaste class...yay! I feel I've got a pretty good handle on it but I REALLY wanna learn how to do more flowers...they look so real!!!

OH I know what you mean...I just finished with the gumpaste and fondant class and course II, I start courseIII this week, yah!! Good luck on your cake!!! Post some pics!! I cant wait to try some new stuff...I have finals this week so as soon as I get caught up its back in the kitchen with me, lol...
