assuming you are talking about fondant type of covering?

Size of the top, plus each side is how you want to measure. For instance a 10" x 3" cake would need at least 16". 10" + 3" + 3"

could hold two draftsman's triangles at right angles to each other. one parallel to cake, one perpendicular to cake...push perpendicular one into cake to make a mark to get it perfectly straight.

or can use supatula to replace perpendicular one.

or use ruler to mark top and bottom edges evenly then connect

but my guess is most just eyeball it.
