I recently started making cakes and have been making all of them from scratch and in the process trying different recipes. I would like to know if mixes that are doctored up are used more than cakes from scratch? Whcih is preferred that you have found?

you are about to get sooooo many answers. everybody hs their own preference as to what they like to do. you can also search scratch mix and then check search for all words and every thread will come up that mentions both words.

welcome to cake central!

(and I bake from scratch, most of my people love my cakes but i have had someone ask my sister to ask me to make them some cupcakes from a mix and my sister said she wouldn't ask me)

I doctor my mixes... and because everyone raves about them, I am a little scared to rock the boat and change........so I say go with what you know... I am going to start adding some scratch cakes in for my family to test out, so I figure long-term I will probably do some of both..

Thanks for the input. I don't want to feel as though I am short changing anyone by using a mix, but if mixes taste equally good then why not? With mixes, one does have a little more certainty that the cake will turn out good.
