when you make a 3D sculpted cake do you torte and fill it? IF so, do you only used certain fillings that are maybe more dense and tend to settle less? If you do, which ones do you use? I'm doing a wondermold and a sports ball and was wondering what I should do with these as far as fillings go....any suggestions???? TIA!!!

I torte and fill my sculpted and 3D cakes with no problems using fruit preserves, buttercreams and ganache for filling. I tried mousse once and it was a disaster!

Thanks for the reply. I always torte everything but since I have yet to do a sculpted cake ( doing one this weekend) I didn't know if i had to do it differently. I just think filling is just another thing that sets us apart from the cake "factories"...ya know? icon_smile.gif

I have uses buttercream and it was so easy to torte. I just did not know that you were supposed to chill the cake to make it easier to carve. It was a crummy mess. Thank goodness for fondant!

I did my first 3D last weekend and filled it with cheese cake mousse, seemed to have held up pretty good!
