You can totally use pudding, that is my most common filling that I use for all my cakes, unless someone requests something else. You can use the pudding cups, or what I like better, is to just whip up the Jell-o instant pudding. It tastes really good. As far as soaking into the cake, it may do that somewhat. I find it only gives a fairly thin layer of filling, I'm not sure how to get it thicker without it squishing out the sides.
