I have to make a cake for easter, but it has to be ready for the Friday before. I've made cakes the day before but never that early. What should I put in the cake so it will still be good for that long?

I think a cake will be fine for two days. I use doctored mixes, so I can't speak for scratch cakes. If you're concerned, maybe you could refrigerate or freeze it.

To be honest you don't want to add any chemicals to your cake. Once it is iced it will be sealed. You should not have any problems.
I have decorated cakes several days ahead and left them in my garage. My winter cooler and had no problems.

A frosted cake will last comfortably up to two weeks in a refrigerator. Keep it in a box if you're worried about frig smells.

As long as it is kept cool there should be no problem. I have made cakes a couple of days in advance and keep them in a cool, dry place; i.e. last week it was the trunk of my car. BEFORE THE THREAD GETS CRAZY.....triple saran wrapped in a box! LOL
