I see on quite a few boards, the use of candy melts. I know what chocolate melts are. Here in Australia I've not seen candy melts.
If anyone can shine a bit of light on this question I would really appreciate it.
Thanks.

Candy melts are basically colored chocolate/candy wafers used in making chocolates and molds etc..most of the wafers aren't pure chocolate but a mix.Wilton,Merkens,Niellson and a few other companies make these bags of melts for candy making. You just melt them and fill your molds, refidgerate and Viola!!!

If you are familiar with Wilton's products. They make chocolate melts (shaped like little disks). They also sell them in all different colors, I guess the flavor of the colored ones would be like white chocolate. You can add flavoring and melt them and use just like chocolate, but in different colors and flavors. Hope this makes sense...

Which brand is better? Any opinions? Are they pretty much the same thing?Would it make much difference anyway?

And how do you melt them? Nuke or stovetop?

I use whatever I can get a hold of usually wilton.I put the inside a disposable decorating bag and microwave them long enough to melt but you have to watch or it will get too hot.Snip the end and you have candy melts to fill a mold.

The supply store I go to carries Merkens and Nestle. I like them alot. Not much of a noticable flavor difference than store brand, but the owner said that there is a difference. For the life of me I dont remember what it is and I forgot to write it down at the candy class I went to, but I do like the flavor. I made candy and gave it out to friends and neighbors for the holidays. You can melt them in the Microwave, just remember to stir every 20 seconds until its melted.

I have used Wilton's and Merckens...but the Neilsen confused me....so I did not buy....it gives tempering instructions for those (it's at a bulk store so no package). Do you use the Neilson wafers the same as the merkens? They only come in chocolate and dark, but they are cheaper.

Also, anyone buy/try the Eagle brand confectioner's coating? Bought some at Walmart before Christmas.
