Torting Or Layering A Cheesecake????

I have a request for a man's birthday cake. Cherry Cheesecake. His wife would like to have it be 2 layers with some cherries in the middle and on top. I thought about trying to tort the cake once it's cooled, but I think it'll probably fall apart. Then, I thought about baking 2 seperate layers. One with the crust and one without. Once both of those cool, I could put the cherry filling on top of the one with the crust and set the other on top of that, and then add the rest of the cherries on top.

What do ya'll think? Does anyone have any experience with this or some better ideas?

I would bake it with the cherry filling in it already. but you could partially freeze the cake and use a sharp knife or wire to cut it, I guess.

I would do two seperate cakes and go from there! Do you have time to do a trial run on it?

I would do 2 separate cakes having the 2nd layer with a real think crust.
