I need to put letters on the side of a round double layer cake. What type of icing should I use. Thanks, Kim

Buttercream works well. I would get the cake up to eye-level before trying to write for better control of your icing.

You could also pipe them in royal icing, and after they dry, stick them on the side of the cake. HTH!

or if into candy-can make the letters out of molds and candymelts-depending on the sizes you need.
